Spicy Mexican Rice

  • A tablespoon or so of oil
  • 1.5 cups Uncle Ben’s Converted rice (uncooked)
  • ¼ cup Pace Picante (medium)
  • 4 tsp. Fiesta Brand Spanish Rice seasoning
  • 2.75 cups water

Heat the oil in a non-stick skillet on high heat. (You’ll need one with a good fitting lid.) Add the uncooked rice and stir it around until the rice is well-coated and a little fried. Add the water, picante and seasoning. Bring it to a boil. Put the lid on the skillet and reduce heat to low. Let cook for 25 minutes (may vary slightly with your stove). Don’t Peek! When it’s done, fluff with a fork and serve hot.
