Pretty good pot roast

  • 1 (3 pounds or so) roast
  • Salt, pepper, garlic salt, paprika
  • 1-2 onions coarsely chopped (about 2 cups), plus another onion or two cut into quarters
  • 3 or 4 garlic cloves chopped, or 2 or 3 spoonfuls of garlic from a jar
  • 1 can beef broth
  • ½ a can or so of Dr. Pepper
  • 1 bay leaf
  • Two or three carrots and two or three potatoes cut into large pieces

Preheat oven to 300. Sprinkle roast with salt, pepper, garlic salt and paprika. Heat oil in Dutch oven over medium high heat; brown roast on all sides. About 15 minutes total. Remove roast from Dutch oven and add onions. Sauté until tender. Return roast to pan and add DP, garlic, beef broth and bay leaf to pan. Bring to a simmer. Cover pan and bake at 300 for 2 hours. Roast should be getting tender. Add carrots and potatoes to the pan. Cover and bake another hour until vegetables are tender.
