Peanut Brittle

The only recipe I have ever used was from Aunt Margaret ( mama’s sister) and I will give it to you.

Peanut Brittle

  • 1 cup sugar, 1 cup Karo, 1/2 cup water
  • Cook in heavy pot until it threads.
  •  Add 1 1/2 cups raw peanuts and cook until golden brown and peanuts are done. They should make a popping sound as they get done. Careful not to burn!!!
  •  Remove from heat and add 1 Tbsp butter stirring in well.
  • Return to heat and add 1 tsp soda Stir in well and pour up on buttered cookie sheet. It will spread itself or tilt the sheet to help. Careful, HOT!!!
  •  Let cool and break into pieces. I usually pry it up and turn it over and tap it with back of a tablespoon.

I was taught not to make candy on a rainy day because it would not get hard but in our air cond. houses, don’t think it matters. Also, keep it in an air tight container or it will melt, does not sit our very long without getting sticky.
