Old-fashioned Potato Soup

Modified from a recipe in Diet for a Small Planet by Frances Moore Lappe

Saute in a heavy pot:

  • 1 medium onion, chopped
  • 3 stalks celery, finely chopped (leaves included)

Add and cook until tender:

  • 3 or 4 medium potatos (2 large), peeled and diced
  • 2 cans chicken broth (or 4 cups water if you don’t have broth)
  • Salt and pepper (I like lots of pepper!)
  • 1 bay leaf

Let cool briefly (maybe 2 or 3 minutes), then using a whisk slowly stir in:

  • 1 cup instant dry milk
  • 2-3 tablespoons of butter

Reheat but do not boil.  Salt and pepper to taste.  Garnish if you are the kind of person who garnishes things.  Good with grilled cheese sandwich, or at my house, a tortilla with cheese melted on it.
